Beets - Golden

Golden beets have a beautiful, golden-orange flesh that is frim and sweet. They retain their color well when cooked, and have the velvety texture of cooked beets without the hand-staining red color.

Uses: Golden beets are most flavorful when roasted or steamed, and can be served hot or cold. They have a velevety smooth texture when cooked.

Preparation and Storage

Preparation: Rinse beets well before use. 

Storage: Store beets unwashed in an open plastic bag in the refrigerator for up to 2-3 weeks. 

Nutrition: Beets are a nutritional powerhouse, with only 75 calories for a 1 cup serving. They are packed with antioxidants, fiber, folate,  potassium and many other vitamins and nutrients. 


  • 1 1/2 pounds Golden beets, peeled and cut into 1 inch cubes
  • 4 teaspoons Olive oil
  • 2 tablespoons of fresh herbs (Rosemary, marjoram, oregano) or 2 teaspoons dried herbs
  • 1 teaspoon lemon zest, freshly grated
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper, freshly ground
  • 1 tablespoon lemon juice 


  • Preheat oven to 450 degrees F
  • Combine oil, herbs, salt, pepper, and lemon juice in a bowl. Add beets and toss to coat with herb mix evenly
  • Spread the beets evenly on a baking sheet, bake for 20-25 minutes stirring once or twice
  • Toss roasted beets with lemon juice and serve
