Uses: Romaine lettuce makes an excellent and versitile salad bed. Its crisp leaves also add a nice texture to sandwiches and burgers.

Preparation and Storage

Preparation: Wash leaves under cool water just before use

Storage: Romaine lettuce should be stored unwashed in a loose, open plastic bag in the vegetable crisper of the refrigerator (5-7 days)



Nutrition: 1 cup only has about 7 calories. Romaine lettuce is a great source of fiber, potassium, and vitamin C.



Recipe:

Grilled Romaine Hearts with Avocado Lime Dressing

Ingredients:

  • 2 Romaine hearts, washed, trimmed, and sliced in half
  • 1 clove of Garlic, minced
  • 2 tablespoons Olive oil
  • Salt and Pepper to taste

Avocado Lime Dressing

  • 1 ripe Avocado
  • 1/3 cup fresh Lime juice
  • 2 tablespoons Rice vinegar
  • 1 tablespoon Olive oil
  • 1 clove Garlic, minced
  • 1/2 teaspoon agave or honey
  • 1/4 teaspoon Cumin
  • 1/4 cup Water
  • Salt and pepper to taste

Directions:

  • Add all the ingredients for the dressing to a food processor or blender and combine until creamy, add a pinch of salt
  • Slowly add water to the mix if the dressing is too thick, refrigerate until lettuce is prepared
  • Heat grill to medium-low
  • Mix garlic, oilve oil, salt and pepper in a cup, brush or spoon the mixture onto the cut side of the lettuce hearts\
  • Place lettuce face down on the grill for 60 seconds or until clear grill marks are seen and the leaves just begin to wilt, flip the hearts over and repeat for another 60 seconds (You want the char marks but not for the whole head to wilt, so pay close attention)
  • Place lettuce on a platter and drizzle the dressing over the hearts, grind fresh black pepper on top
  • Add optional toppings of sliced green onions, choppe cilantro, diced tomatoes, or fresh asiago cheese and serve immediately
